Produced by cooperatives of small-scale farmers in the Edido village (kebele) of Ethiopia's celebrated Gedeo Zone, Yirgacheffe Edido G.2 is processed at nearby washing stations in Aricha.
Embracing deep-rooted cultural traditions and practical infrastructure, these smallholders favor the natural process. The coffee cherries are carefully sun-dried on raised beds and turned frequently to ensure uniform drying. This meticulous, hands-on care preserves the intrinsic sugars of the bean, resulting in the highly distinctive, vibrantly floral and fruity flavor profile that makes Yirgacheffe naturals world-famous
