Brew authentic Bavarian wheat beers with Wyeast 3068 Weihenstephan Weizen, the classic liquid yeast strain renowned for producing the signature balance of banana esters and clove-like phenolics found in traditional German hefeweizens. This highly expressive top-cropping strain creates the unmistakable aroma, flavor, and natural haze expected in world-class wheat beers. Each Wyeast Activator™ pack contains approximately 100 billion cells, providing enough healthy yeast to ferment a standard 5-gallon batch under appropriate conditions. Wyeast 3068 is ideal for brewing Hefeweizen, Weissbier, Weizenbock, Roggenbier, Sahti, and Fruit Wheat Beer.
Wyeast 3068 develops the classic interplay of ripe banana esters and spicy clove phenolics that defines traditional German wheat beer. Fermentation temperature allows brewers to tailor the finished profile—cooler temperatures emphasize clove and spice, while warmer fermentations increase banana character. As a naturally low-flocculating strain, it remains suspended longer to produce the signature cloudy appearance associated with authentic wheat beers. This vigorous, top-cropping yeast also benefits from additional fermenter headspace during active fermentation.
This liquid ale yeast features low flocculation, 73–77% attenuation, POF positive, and an alcohol tolerance of approximately 10% ABV. It performs best between 64–75°F (18–24°C) and is packaged with approximately 100 billion cells for dependable fermentation performance and consistent results across traditional wheat beer styles.
For best results, store refrigerated between 33–38°F and do not freeze. Pitch cold into well-oxygenated wort and ferment within the recommended temperature range. One Activator™ pack is suitable for many standard-strength 5-gallon batches, while a yeast starter is recommended for higher-gravity beers or older yeast packs. Because this strain ferments vigorously, leave extra headspace or use a blow-off tube to accommodate active fermentation.
Trusted by homebrewers and professional brewers around the world, Wyeast 3068 Weihenstephan Weizen delivers the authentic fermentation profile that has made it the benchmark for German wheat beer production. Its healthy cell count, dependable performance, and classic banana-and-clove character make it an outstanding choice for brewing traditional Bavarian wheat beers with exceptional aroma, flavor, and natural haze.
