From Casoni Distillery, based in Finale Emilia, just outside of Modena, Italy. Tomaso Agnini Balsamic Vermouth represents a distinctive innovation in vermouth craftsmanship, marrying traditional vermouth-making with the aged complexity of balsamic vinegar from Modena. The result is a fortified wine that eschews traditional categories. It is equally at home in adventurous cocktails or as a refined digestif.
The appearance is a deep mahogany-brown with hints of burgundy. The nose opens with an inviting bouquet of aged balsamic—deep, slightly sweet, and complex—complemented by traditional vermouth botanicals: warming spices, herbs, and hints of vanilla and dark fruit. Notes of cinnamon, clove, and subtle wood aging create a sophisticated aromatic profile that balances vinegar's characteristic tang with herbal warmth and natural sweetness. The palate reveals the masterful interplay between balsamic character and vermouth tradition: deep, slightly sweet balsamic notes provide foundation for herbal botanicals, spice, and subtle fruit to emerge gracefully. Flavors of aged balsamic, dark caramel, and warming spice are complemented by herbal complexity and hints of dried fruit, creating a multi-dimensional experience. There's a pleasant acidity from the balsamic that provides brightness and balance, preventing sweetness from dominating while adding a distinctive tanginess that sets this vermouth apart. The finish is warm and lingering, with persistent balsamic sweetness and acidity balanced against herbal warmth and spice—a sophisticated, memorable conclusion.
