This Cava displays a pale yellow colour with fine, persistent bubbles and a bright yellow colour with a gold rim for the 2012 vintage. The complex aroma presents intense notes of white fruit and flint, with soft hints of fresh apple and citrus. These fruit notes are beautifully interwoven with developing nuances of toast, pastry, and brioche, stemming from long ageing on the lees. On the palate, the wine is elegant, fresh, and tasty, with a creamy, fleshy stone fruit character and an integrated mousse. It has a lively mouthfeel with lemon curd acidity, showcasing a balanced and complex profile. The finish is long, dry, and elegant, where the pastry and toasted notes reappear to provide longevity.
The traditional Cava varietal composition for the 'Letargia' is typically Xarel-lo, Macabeo, and Parellada.
Food Pairing
This seriously elegant Cava is divine with seafood and shellfish. Suggested pairings also include cured cheese, white meats, and seafood rice dishes. The Cava's complexity and long, dry finish make it a versatile pairing partner. A perfect match to enhance the wine's complexity.
