Peru Chincamayo Medium-Dark Roast is a certified Organic and Fair Trade single origin coffee grown by La Florida, a coffee cooperative in the Chanchamayo province of Peru's Junín region, and roasted to medium-dark in our Scarborough roastery. Washed processed and packed as 300g whole beans, this lot delivers a warm, sweet cup: sweet chocolate and caramel upfront, mandarin citrus and delicate floral notes woven through, with a smooth, rounded body that thickens nicely at this roast level. This is one of the few genuinely certified organic and fair trade coffees in our lineup — real third-party audited standards, not just a claim. 100% Arabica, single origin, specialty grade.
Roasted fresh in Scarborough. Ships across Canada.

Brewing guide +
Espresso
18g in, 36g out, 27 to 30 seconds. Chocolate and caramel lead, citrus settles into a background sweetness. Full body with good crema — an easy, comforting daily espresso.
Moka pot
Medium-fine grind, standard fill. Concentrated chocolate and caramel with a bright mandarin lift that keeps it from tasting heavy. A reliable stovetop cup.
French press / drip
Coarse grind, standard steep. Full immersion draws out the smooth body fully and rounds the floral note into the background. Comforting, easy-drinking daily cup.
Grind immediately before brewing to keep the mandarin citrus and floral notes from fading. Whole beans hold peak flavour far longer than pre-ground coffee.
About this coffee +
This coffee is grown by La Florida, a coffee cooperative based near Yurinaqui in Chanchamayo province, part of Peru's central jungle coffee corridor on the eastern slopes of the Andes in the Junín region. As a cooperative, La Florida pools coffee from many smallholder farmers in the area, providing shared processing infrastructure, quality control, and export access that individual small farms could not reach alone — a structure common across Peru's specialty coffee sector.
This lot carries genuine, independently audited Organic and Fair Trade certification. Organic certification confirms cultivation without synthetic pesticides or fertilizers. Fair Trade certification confirms the cooperative and its farmers received a guaranteed minimum price plus a social premium invested back into the community, regardless of market swings. Together these represent real, verified standards behind every bag — not marketing language.
The green lot behind this roast was independently evaluated with a cupping score in the specialty range, confirming clean, sweet, well-balanced character before it ever reached our roaster. We roast it to medium-dark because that is where the chocolate and caramel sweetness this lot is known for fully develops, while the mandarin citrus and delicate floral top notes stay present rather than disappearing — a warm, comforting cup with just enough brightness to keep it interesting.

Frequently asked questions +
What does Organic and Fair Trade certification actually guarantee?
Both certifications are independently audited, not self-declared. Organic confirms the coffee was grown without synthetic pesticides, herbicides, or fertilizers, verified through farm inspection. Fair Trade confirms the cooperative and its member farmers received a guaranteed minimum price regardless of market swings, plus a social premium invested in community projects. This coffee carries both — genuine, audited standards behind the bag, not marketing claims.
Why is this roasted to medium-dark rather than lighter?
Medium-dark is where this lot's chocolate and caramel character fully develops without losing the mandarin citrus and delicate floral notes that give the cup its brightness. A lighter roast would emphasize the citrus and floral side more, while pushing darker would bury it under roast character entirely. This roast level balances warmth and sweetness with just enough lift to keep the cup interesting — a genuinely comforting, easy-drinking daily coffee.
Is this coffee good for espresso, or better for drip and French press?
Both work well. As espresso, the chocolate and caramel lead with good crema and a comforting full body — an easy daily shot. As drip or French press, the full immersion rounds the body out even further and settles the floral note into the background for a smooth, mellow cup. Moka pot sits nicely in between, with the mandarin brightness cutting through the concentrated chocolate base.
How should I store this coffee and how long does it stay fresh?
Keep the bag sealed in a cool, dark place away from heat and moisture — never the fridge. Whole beans hold peak flavour for 4 to 6 weeks after opening. Grind immediately before brewing to preserve the mandarin citrus and floral top notes.
