Peach Rings is Tran Ngoc Lan's refusal to let the harvest calendar decide when a cherry is ready.
On the slopes below Langbiang in Da Sar, Lac Duong, at 1,450 to 1,650 meters, cold nights stretch ripening so far that one branch can carry green and deep-crimson fruit at the same time. Lan sends her team back through the same rows again and again, taking only what is ready. Each extra pass costs a day and a wage.
Her vision was precise: the candy lift of peach rings and apricot jam, carried on wildflower honey, finishing with the clarity of black tea rather than syrup.
Ripe Catimor and Typica are floated, sorted, depulped and sealed for a 48-hour anaerobic honey fermentation, then dried under shade in thin layers, turned constantly against the mountain damp.
For Lan, specialty coffee is the belief that sweetness only reads as elegant when definition is protected first.
