NON 1 Salted Raspberry & Chamomile is a 0.0% non-alcoholic wine alternative made by NON, founded by Aaron Trotman in Melbourne, Australia in 2019. It is built on a verjus base pressed from Semillon grapes grown in the Barossa Valley, layered with freeze-dried raspberries, chamomile, Murray River salt and organic cane sugar. The raspberries are cold steeped for 48 hours, with chamomile and raspberry skins supplying tannin and the verjus supplying acidity. It is produced in a purpose-built facility in Cheltenham, Melbourne, and is vegan, gluten-free and halal certified.
