Introduction:
Mount Gay Eclipse Rum is a crisp and aromatic expression that serves as the benchmark for the Mount Gay style. Crafted using a blend of traditional column and double retort pot still distillation, Eclipse is aged in charred ex-American whiskey barrels, resulting in a smooth and balanced rum with depth and complexity.
Tasting Notes:
- Nose: Distinctive vanilla and banana aromas with undertones of caramel, summer fruit, and spice.
- Palate: Light oakiness with subtle burnt notes and a hint of spice.
- Body: Light to medium-bodied with a smooth texture.
Pairings & Serving Suggestions:
Enjoy Mount Gay Eclipse neat, on the rocks, or in classic rum cocktails like a Rum Punch or Dark 'N' Stormy. Its balanced and versatile profile also makes it a great companion to grilled seafood, spiced barbecue dishes, and tropical fruit-based desserts.
