Jairo Arcila produces this Castillo lot at Villarazo in Colombia, where Monogram has maintained a relationship with him over several years. His coffees range from classic washed offerings to more experimental lots, with a consistent focus on expressive flavours and careful processing.
For this coffee, controlled cherry co-fermentation develops a vivid fruit character while retaining sweetness and floral definition. Castillo provides the foundation for an inventive profile of cherry cola, orange blossom and marzipan. The filter version brings those elements together in a bright, juicy cup, balancing playful cherry flavours with a fragrant finish. It is a natural choice for drinkers interested in fruit-led Colombian coffees and Jairo's creative approach to fermentation.
